What if we cut down on waste?  Prepare some cookies made from leftover pain au chocolat!

Preparation : 20 minutes
Preheat the oven to 180°C (350°F). Tear the day-old chocolate croissants into pieces and place them on a baking tray.
Dot with a little butter and bake for 15 minutes until lightly toasted. Let cool slightly.
Prepare the cookie dough: whisk together the melted butter, sugar, and vanilla.
Add the egg and mix until combined. Stir in the flour, baking powder, and salt, then fold in the chocolate chips.
Crumble the toasted chocolate croissants and gently fold them into the cookie dough.
Scoop portions of dough onto a lined baking tray, spacing them apart.
Bake for 10–12 minutes, or until the edges are lightly golden.
Chef's tip
Add a pinch of sea salt to the dough to balance sweetness and enhance chocolate notes.
