Celebrate the season with our Festive star, a pastry filled with smooth pistachio cream and topped with delicate royal icing. Perfect as a holiday treat, this star-shaped pastry is as pleasing to the eyes as it is to the taste buds.

Preparation : 10 minutes
Grease the star-shaped mold with a baking spray.
Make sure the croissants are completely thawed, then arrange them evenly inside the mold.
Place a sheet of baking paper on top, followed by three baking trays to keep the croissants flat during baking.
Bake for 23 minutes at 170°C, remove the trays and baking paper, then bake for an additional 5 minutes to finish the colouring.
Let the star cool down completely before decorating.
Meanwhile, prepare the royal icing: whisk the egg white and icing sugar until the mixture becomes smooth, light and fluffy. Add a splash of lemon juice at the end to perfect the consistency and set aside.
Put the pistachio filling into a piping bag and fill each croissant of the star generously.
Dressing : 5 minutes
Using a piping bag or small cornet, pipe a snowflake design on top, and outline the edges of the star for a clean, festive look.
Finish with a touch of pistachio filling in the middle of the star and sprinkle with the chopped pistachio.
Chef's tip
For an even more indulgent version, you can fill the croissants before baking : pistachio paste, chocolate, or fruit jam all make delicious options.
