Use yesterday’s leftovers for this recipe, perfect for your on-the-go menu, with croissant filled with almond cream and finished with honey butter and toasted almonds.

Make the honey butter
Melt the butter.
Add the honey and whisk until fully combined and emulsified.
Prepare the croissant
Cut the croissant in half lengthwise, creating an opening for the filling.
Brush the entire surface of the croissant generously with the honey butter mixture.
Sprinkle evenly with brown sugar.

Chef's tip
