This Piadina wrap is the fusion of the Italian piadina and a classic omelette. Ideal for sandwich stores, or coffee shops. Perfect for a quick meal that is easy to prepare for on-the-go.
Preparation : 5 min
In a bowl, beat the 2 eggs with a pinch of salt and pepper. Heat a pan over medium heat and add the beaten eggs.
Cook the eggs, stirring gently, until they are fully set and form a thin omelette.
Add the piadina on the top of the omelette. Sprinkle the grated cheese over the omelette.
Remove it all from the pan and place it on a clean surface.
Slice the 1/2 avocado and 1/2 tomato. Add the sliced avocado and tomato on one half of the piadina.

Fold the piadina in half, covering the filling, then roll it up tightly like a wrap. Cut the piadina wrap in half for easier handling and serve immediately.
Chef's tip
For extra flavor, you can add a spread of pesto before placing the piadina on the omelette. You can also add some fresh herbs such as basil or cilantro for a touch of freshness.
