Let the seed croissants defrost for 20 minutes, and cut them in half before baking for 15 minutes at 170°C.
Truffle scramble filling:
Beat the eggs with truffle bits, and truffle oil.
Cook the egg mixture on very low heat in a pan, and stir until the desired texture is obtained.
Season with salt and pepper and fill immediately into the croissant.
Smoked trout filling:
Mix the sour cream with chopped dill.
Place 20g of smoked trout into the cut croissant, then add 10g of dill cream.
Butternut and parmesan filling:
Mash the butternut squash, then add the grated parmesan, cream, vinegar, pistachio oil and season with salt and pepper.

Fill the croissants with the preparation, and sprinkle with flax seeds.
