Preparation : 20 min
- Make the breadcrumbs by pulsing the dry bread in a food processor or blender, or crushing with a rolling pin.
- Place in the mixer bowl and mix with the flour, parmesan cheese and softened butter to obtain a crumbly texture.
- Add the egg and mix to a firm dough.
- Roll out thinly. To prevent the dough from sticking to the rolling pin, place it between two sheets of baking paper.
- Cut out crackers around 3cm square.
- Beat the whole egg and use a pastry brush to glaze the crackers.
- Sprinkle with grated Gruyère cheese. Season with salt and pepper.
