Brighten up any season with the zesty lemon meringue teardrop. Perfect for coffee shops and tea rooms, this dessert is a good choice in winter, but its refreshing flavor makes it suitable year-round. Ready in just 30 minutes, it’s an attractive and versatile option that can be varied with other citrus fruits such as orange or passion fruit for new and interesting flavors.
Preparation : 20 min
Bake 6 teardrops & leave to cool.
Prepare the lemon cream by beating the egg yolks with the sugar, lemon juice, and lemon zest. Do not add the butter at this stage.
Heat the mixture to 85°C for five minutes while stirring continuously.
Leave to cool to approximately 20°C, then add the softened butter, which should have the consistency of cream. Reserve in the fridge.

You can make variations replacing lemon juice by different fruits: Passion fruit or orange (for orange, add 10% of lemon juice to orange juice).
