Slice the croissant in half horizontally.
Slice the Mozzarella di Bufala into thin pieces.
Thinly slice the avocado and drizzle with lemon juice to prevent oxidation.
Rinse and pat dry the spinach leaves and micro sprouts.

Open the sliced croissant.
Layer the bottom half with slices of Mozzarella di Bufala.
